My Spring Vegan Carrot Cake Cream Cheese Frosting

Recipe inspired by the opera Die Fledermaus


Described as the operetta for people who hate operetta, Die Fledermaus “Die Fledermaus (The Bat)” which was composed by Johann Strauss II, is classified as operetta. Operetta is derived from a “comedy” part in an opera. Some regard operetta as something light, so some top-level opera houses don’t allow operetta to be performed there. But, “Die Fledermaus” is an exception. This story is on the last day of the year, some German opera houses often have performances

at night on the last day.







Vegan Carrot Cake with Cream Cheese Frosting

Ingredients: For the cake:

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 1/2 cup vegetable oil

  • 1/2 cup unsweetened applesauce

  • 1 cup granulated sugar

  • 1/2 cup unsweetened almond milk

  • 1 teaspoon vanilla extract

  • 2 cups grated carrots

For the frosting:

  • 1/4 cup vegan butter

  • 4 oz vegan cream cheese

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1-2 tablespoons unsweetened almond milk

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

  3. In another bowl, whisk together the oil, applesauce, sugar, almond milk, and vanilla extract until smooth.

  4. Add the wet ingredients to the dry ingredients and stir until just combined.

  5. Fold in the grated carrots.

  6. Pour the batter into the prepared cake pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

  7. Let the cake cool completely before frosting.

For the frosting:

  1. In a large bowl, beat the vegan butter and cream cheese together until smooth.

  2. Add the powdered sugar and vanilla extract and beat until smooth.

  3. Gradually add the almond milk until the desired consistency is reached.

  4. Frost the cooled cake and enjoy!
